Basic Dough original
Made from mamasdough mix straight from the pantry

Ingredients
4C of mamasdough mix
1.5C warm water
65g melted butter
1 egg
1T yeast (mama loves Bakels Angel yeast)
Method
- In a bowl, mix together water, butter, egg and yeast.
- Add 4C of Original mamasdough mix into the bowl and mix to form a sticky dough by hand (or electric mixer for 4min)
- Rise till double in size
- Turn dough on to a floured bench
*Your dough is now ready to create!

Donuts

Ingredients
mamasdough mix
canola oil (for frying)
Cinnasugar (or other donut topping of your choice)
Cinnasugar
1C sugar
1/2T ground cinnamon
*add cinnamon to taste
Method
- Follow instructions on mamasdough mix for basic dough
- Roll out dough to a rectangle 1-2cm thick
- Using a donut cutter (or cup with bottle cap), cut dough into donut shapes
- Let rise (approx. 20min) while you heat oil on medium high heat
- Add donuts to the oil and fry for approx. 2min on each side (using chop sticks to flip)
- Place finished donuts on to wire rack to cool
- Coat warm donuts into cinnasugar or top with your favourite icing/topping

- Preheat oven to 160°C
- Follow instructions on mamasdough mix for basic dough
- Spread filling paste over dough
- Roll up the entire piece of dough
- Cut roll of dough into even pieces (approx. 1 inch)
- Lay pieces flat in lined oven tray; leave 2cm space between for rising
- Let rise till double in size in a warm place
- Bake at 160°C for 30min or until golden

Hot Cross Buns

2 T mixed spice
3/4 C sultanas/raisins/chocolate chips
Flour (for crosses)
Paste for crosses
Combine water and flour to make a thick paste
Method
- Preheat oven to 160°C
- Follow the mamasdough mix instructions (add the spice mix and sultanas/choc chips with dough mix)
- Once risen, turn dough out onto floured bench
- Fold dough over to form a rectangle
- Cut into even sized pieces (12–24)
- Roll into balls and place in oven tray; leave 2cm space between for rising
- Let rise till double in size in a warm place
- Fill piping bag with paste; pipe crosses over risen buns
- Bake in the oven at 160°C for 30min or until golden brown
- Glaze with melted jam (mamas loves apricot jam) while still hot

This is mamas take on a traditional coconut bun
Method
- Preheat oven to 160°C
- Follow the mamasdough instructions for basic dough
- Once risen, turn dough out onto lightly floured bench
- Fold dough over to form a rectangle
- Cut into even sized pieces (12–24)
- Roll into balls and place in oven tray; leave 2cm space between for rising
- Let rise till double in size in a warm place
- Pour Coconut sauce over buns (cover at least half way; any remaining sauce, use half way through cook time)
- Bake in the oven at 160°C for 30min or until golden brown

1/2T ground cinnamon
Mix together
*add cinnamon to taste
Method
- Pour mamasdough mix into a bowl (yeast sachet not required)
- Add oil and boiling water to bowl and mix until just combined
- Let cool and then pour into piping bag
- Heat canola in frying pan on a medium high heat
- Pipe lengths and cut using scissors into hot canola oil
- Cook to your desired colour then serve as is or coat in cinnasugar

- Follow instructions for basic dough using mamasdough mix and refrigerate over night
- Next day, Roll dough into rectangle
- Lay butter sheet or slices across middle third of dough and fold dough onto the middle third roll fold repeat x2 then refrigerate. Repeat process 2-3 times more
- Roll to .5cm thick Cut into long triangles and roll up
- Brush with egg wash and leave to rise
- Bake on 180deg Celsius

Method

- Roll out dough to a rectangle
- Soften biscoff and spread over the dough

Crush oreos
Icing
Whip 50g of butter and cream cheese till light and fluffy.
Then add icing sugar to desired taste and consistancy. (add a little cream for a silky finish)
Method
- Follow instructions on mamasdough mix for basic dough
- Roll out dough to a thin rectangle
- Spread softened butter on the dough and sprinkle crushed oreos on top
- Roll up the dough and cut into even slices (approx. 1-2in thick using cotton)
- Place in a lined baking dish leaving 1-2cm space between each for rising and leave to rise (approx 20min)
- Baked on 160deg C for 20min or until golden
- Top with cream cheese icing
